Chilli
Jelly
A naturally set ruby jelly
with a subtle kick of chilli – one of
my favourites, I love it with everything – chicken, pork, cheese,
sausages, pates & terrines; try warming it up till it melts and pour
over mixed salad leaves or baked camembert cheese!! Yum Yum.
Ingredients: Apples, sugar, vinegar, chilli’s.

Course
Grain Honey Mustard
An excellent, multi purpose mustard – a
must for all store cupboards! Don’t just keep this mustard for the Sunday
roast of beef and Yorkshire puddings, or your Saturday night treat of steak – this
mustard is good with so many things; when cooking fish, pork or chicken, add
a little mustard to some reduced white wine and cream or crème fresh to
make that perfect sauce; mix with a little more honey and baste over a joint
of ham or garlic studded lamb for a delicious new taste; mix with mayonnaise
and bind new potatoes for a twist in your normal potato salad; or simply add
to salad dressings.
Ingredients: Mustard
seed (yellow & brown), vinegar, honey, water, salt, cinnamon, mixed
spice, lemon juice.

Crab
Apple Jelly
Sweetness with a bite! Those of you that have had this before know how good it
is with all hot and cold cooked meats, with cheese and even as an addition when
making curry sauces – usually a limited stock due to shortage of these
apples!
Ingredients: Crab
Apples, sugar.

Cranberry & Port
Sauce
This is too good to keep for Christmas day alone – delicious with most
meats as well as vegetable terrines and nut roasts. The perfect accompaniment
to roast poultry and is also very good with duck and game dishes – try
placing a tea spoon onto your individual Yorkshire pudding batter before baking – quite
an experience.
Ingredients: Cranberries, sugar, port, water.

Sea Salt
A wonderful combination of course sea salt, herbs provencal and mixed pepper
corns – can
be use in a salt mill or sprinkled directly over food before cooking, eg. roast
chickens & potatoes!
Ingredients: Natural
sea salt, herbs, de provence, mixed peppercorns.

Horseradish
Mustard
This
again is quite a course mustard, it is perfect to have with all roast meats and
steak, also, add to sandwiches, pork pies and meat pies. This is hotter than
the honey
mustard, but does mellow with age!
Ingredients: Mustard seed, freshly grated horseradish,
vinegar, honey, spices.

Horseradish Sauce
The perfect partner to roast beef and steak! I also put it
in a variety or different salad dressings, including potato salad,
and
I love it with roast pork and chops! I finely grate the fresh horseradish
(and cry throughout the process) and mix it in a mayonnaise to
give a creamy medium hot sauce.
Ingredients: Freshly grated horseradish, vinegar, mayonnaise, oil.

Jelly
This is a truly delicious jelly. Made from the juice of cooked apples. This allows
the jelly to set from the natural pectin found in the apples and therefore the
use of gelatine as a setting agent is not required making this suitable for the
vegetarian. Traditionally served with roast lamb, but equally as good with roast
chicken and over vegetables! I do not add food colourings, so visually does not
look like a jar you may buy in the supermarket.
Ingredients: Apple
juice, sugar, vinegar, fresh mint.

Red Currant Jelly
The perfect partner to most meats, especially poultry & game. Also
delicious added to sauces and gravies.
Ingredients: Redcurrants, sugar. Total sugar content:
60 grams per 100 grams.

Quince
Jelly
Not always readily available due to low stocks of this wild apple.
Delicious with most meats and even cheese. Can also be added to sauces
and gravies.
Ingredients: Quince Apples, sugar. Total sugar content:
60 grams per 100 grams.
