Brinjal Pickle
This is an authentic hot, Indian pickle packed with diced aubergines
and freshly minced garlic and ginger. It is not as sweet as the
commercial brands, which is an added attraction to those who love ethnic
foods.
It makes an excellent accompaniment to any Indian dish, or even
the basis for your own curry (just add meat). Is also good served with
cold meats or alternatively, why not mixed with a little mayonnaise,
natural yoghurt or crème fresh for a tasty dip.
Ingredients: Aubergines,
vegetable oil, fresh garlic, fresh ginger, cumin, vinegar, salt, chilli,
turmeric, sugar.

Pickle
This pickle is popular amongst those who prefer a traditional
accompliment to their cold meats, cheeses and sandwiches.
I have devised this recipe, based upon the principle ingredients of
the
Ploughman’s
/ Branston Pickle, although not identical, it is as close
as I can get branded product using only natural ingredients.
Ingredients: Carrots,
onions, vinegar, Swede, brown sugar, white sugar, cornflour.
Suitable for Vegetarians
Sweet
Piccalilli
As the name suggests this is a ‘sweet’ piccalilli,
with a sharp but subtle bite. Made from only the best ingredients
of
shallots not pickling onions, courgettes not marrows –you
could easily eat this straight from the jar. Top accompliment has to
be a good
cheddar
cheese, as good with all cheeses, cold meats and pork pies.
Ingredients: Vinegar,
sugar, courgettes, shallots, cauliflower, mustard powder, turmeric,
cornflour.
